What matcha is, and how ceremonial and culinary grades differ.

Matcha is finely stone-ground green tea whisked into hot water rather than steeped. Ceremonial grade is smooth and vivid green, made to drink on its own; culinary grade is stronger, made for lattes and sweets.

A good matcha is bright, smooth and only gently bitter. Whisk it briskly to raise a fine foam, and drink it fresh while the aroma is at its peak.
